Arick Gleissner 4/23/2018 8:02 PMFor my challenge I decided to eat one meatless meal a day. Finding food to eat is fairly easy. Just getting myself to eat it is hard to do. I usually choose to use breakfast as my meatless meal. I tired to do a vegan breakfast, but it was too difficult. So for breakfast I usually eat yogurt with granola with a side of fruit with a cup of coffee. It's easy and meatless, yet it still provides me enough energy and protein to get myself to lunch. The biggest challenge for me was I could feel the effects of not eating enough for breakfast. I usually eat a small lunch because I don't want to be too full for football and lifting which is after my afternoon classes. By the time football/lifting comes around from 2:20pm-6pm I'm starving and feel tired. I feel that I have less energy and stamina, because I'm not getting enough calories during the day. Since I eat a smaller lunch, I'm used to eating more for breakfast. But since I'm so hungry at night from football I eat too much for dinner which results in myself feeling full in the morning and not eating enough. I may try to make my lunch the meatless meal and settle for a salad or even try to eat fruit or something as a snack periodically throughout the day. But I knew this would be a challenge because I need to eat enough calories, so I'm not losing weight from all the calories I burn throughout the day from football.
