Skye Volk 4/23/2018 6:35 PMI chose to go completely meatless for my ecochallenge. I have always wondered what it would be like become vegetarian and decided this was the time to give it a try! The hardest part about this challenge is having a meal and not feeling hungry 30 minutes later. I find myself snacking more than usual, but I am also eating healthier meals and snacks. I have found myself eating lots of eggs because they are super cheap, nutritious, and if I hard boil them they are easy to take on the go. The first couple days didn’t really phase me, but it soon got harder because I feel like there is less variety in what I eat.
